Soft, Medium or Hard? A Brush Stiffness Guide for Food Hygiene
Bristle stiffness decides how well a brush cleans and how much it risks damaging the surface. Too soft and it skates over stubborn soil. Too hard and it scratches or sheds. This guide explains what soft, medium and hard bristles are best for in food sites, using Vikan's range as the example.

Why stiffness matters
Cleaning needs mechanical action. Stiffer bristles transfer more force to the surface and reach into texture. Softer bristles are gentler and spread cleaning solution without marking the surface. The best choice depends on the soil, the surface and the risk if something goes wrong.
Soft bristles
Soft or split bristles suit light soil and delicate surfaces. Vikan's waterfed washing brushes and large multi-purpose hand brushes come in soft versions, for tasks like washing and sweeping where the aim is to lift dirt without marking. Use soft brushes for dry dust, fine surfaces and finishes that scratch easily.
Medium bristles
Medium is the all-rounder. It has enough stiffness for everyday soil and enough give to avoid damage. Vikan's dish brushes and several of its tube brushes (including the Ø20, Ø50 and Ø60 mm sizes) are medium. If you're unsure, start here.
Hard bristles
Hard bristles are thicker and suit heavy deposits. Vikan describes its hard tube brushes as best for scrubbing and dislodging stubborn soils like fatty deposits, grease, dried batter and biofilms when washing with cleaning solution. Hard bristles are common in drain, pipe and equipment cleaning.
Very hard bristles
Vikan also makes very hard detail brushes for small, tough jobs. Use them where a stiffer brush is needed in a small area, and only on surfaces that can take it.

This is a rule of thumb. Check each product's specification and confirm it suits the surface and your cleaning chemicals.
Bristle loss and food safety
In a food site, a lost bristle is a foreign body. Vikan's Foreign Bodies hub covers cleaning tool hazards such as bristle loss. Don't forget the colour

Choosing and caring for brushes
- Match stiffness to the soil and surface, not to habit.
- Rinse and dry brushes after use, and store them hanging so bristles keep their shape.
- Check bristles at the start of every shift.
